Pumpkin Chocolate Chip Cookie Recipe
Today my 11 year old made pumpkin chocolate chip cookies. It turned out great. However, I would add pumpkin pie spice and maybe a tad more vanilla. But I can’t leave anything alone..I have to tweak it all. Normally she does also but this time she followed the recipe. Let’s call it Home Econ 101! LOL.

My favorite mug and cookies! WOW..I really know how to treat myself!
INGREDIENTS:
1 Cup canned or fresh pumpkin
1 Cup white sugar
1 tsp. baking soda
1/2 tsp. salt
1/2 Cup vegetable oil
1 T vanilla extract
1 egg
2 Cups chocolate chips
2 Cups flour
2 tsp. ground cinnamon
*you may add walnuts if you like.
DIRECTIONS:
1. Combine pumpkin, sugar, oil, and egg. In another bowl, stir flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with milk and stir in. Add flour mixture to pumpkin mixture and mix well.
2. Add vanilla and chips. (add nuts here if you desire)
3. Drop by spoonful on greased cookie sheet and bake at 350 F for approximately 10 minutes or until lightly brown and firm.

When we got our pumpkin chocolate chip cookie recipe 14 years ago, NO ONE else had ever tried them. Now I am seeing them every where. They have become so popular (probably because they’re so yummy!
