    An easy and healthy meal I invented.
    Chicken and rice in the microwave.
    I buy chicken drumsticks and thighs on sale.
    Cut the meat off the bone
    Place the dark meat in bottom of microwavable bowl.
    Add 1 cup white rice
    Add 2 cups water
    cover
    Place in microwave at 75% power for 40 to 45 minutes.
    Rice is cooked, chicken is tender
    Add salt, pepper as desired.
    A little experimentation required depending on your microwave power.
    If the rice is too dry then reduce cooking time.
    Mine comes out perfect everytime this way.

    I forgot to mention. Use dark meat. White meat is to particulat about cooking time and will turn out over cooked for this recipe. I know, I have already tried it.
